Black-Eyed Pea Hash

I would have rated this dish higher for it's taste, but I couldn't because of the confusing instructions. The recipe instructs you to combine the hash mixture with the rice and simmer for 15 minutes, which I did. Then, later in the instructions, it says once done, serve the hash over a bed of rice. Too late, can't do that now. I should have paid closer attention to their photo which shows it over a bed of rice, so apparently that was their intent. No matter, it tasted fine with the rice mixed in with the hash mixture.

Ingredients include black-eyed peas, garlic cloves, small onion, medium red bell pepper, stalks celery, small carrots, kale, olive oil, bay leaf, fresh thyme sprigs, cooked white rice, salt (optional), black pepper, and low-sodium chicken broth. Nutrient values - Sodium: 242 mg, Potassium: 318 mg, and Phosphorus: 83 mg.




Cranberry and Roasted Garlic Risotto

This Risotto sounded bland when I first read the recipe, but it turned out very flavorful. I altered the recipe slightly which instructs you to sprinkle the cheese after baked. I sprinkled the Parmesan before placing it the oven so it would have a baked cheese topping.

Ingredients include onion, butter, roasted garlic, Arborio rice, low-sodium chicken broth, sweetened dried cranberries, and Parmesan cheese. Nutrient values - Sodium: 100 mg, Potassium: 184 mg, and Phosphorus: 66 mg.




Hint of Lime Rice

A very good side dish that would compliment a number of Davita's meat entrees. The seasoning is very subtle and because the nutrient values are excellent, this side dish is a good addition to an entree that is a little high in nutrient values.

Ingredients include olive oil, onion, basmati rice, water, unsalted butter, lime, and sprigs of cilantro (optional). Nutrient values - Sodium: 6 mg, Potassium: 55 mg, and Phosphorus: 43 mg.




Rice Pudding with Cranberry Sauce

Not that this rice dish is plain tasting, it's pretty good, but Davita cookbooks have such a huge inventory of treats, snacks or desserts that are more flavorful. I altered the recipe slightly which instructs you to place one full almond at the bottom of the pudding mixture. Instead I mashed the almonds into pieces to sprinkle it as a topping.

Ingredients include unsweetened almond milk, instant white rice, sugar, eggs, vanilla extract, raw almonds, whole berry cranberry sauce, and cinnamon. Nutrient values - Sodium: 113 mg, Potassium: 125 mg, and Phosphorus: 70 mg.
