Farro and Apple Salad with Citrus Vinaigrette

A crunchy salad full of flavor. However, I would like this better without the Farro. It adds little to no flavor to the dish. This is the first time I've tried Farro. I sampled a spoon of it and it's really bland. But everything else, the cheese, apple, the homemade vinaigrette dressing are top notch.
Ingredients include dry farro, medium apples, chickpeas, orange juice, Dijon mustard, vinegar, honey, live oil, goat cheese, and butterhead lettuce. Nutrient values - Sodium: 186 mg, Potassium: 387 mg, and Phosphorus: 223 mg.

Southwest Pasta Salad

Some pasta salads, even deli quality, are a hit or miss with me, but I liked this dish overall. Ingredients include Rotini pasta, red bell pepper, green bell pepper, black beans, corn, purple onion, Italian dressing, paprika, basil, and Sriracha hot sauce.
The recipe calls for eight ounces of cooked Rotini pasta, but I don't think that is enough in relation to the other ingredient amounts. As you can see in the image, the pasta is dominated by the other ingredients. This is good enough to fix again, so I will likely increase the amount of pasta.

Taco Pasta Salad

This is a very good dish, but there are a few points of improvement I would make. 1) I would add a little more hot taco sauce to truly make it a spicy mexican dish. 2) The recipe instructs you to lay the mixture over a bed of lettuce, which I did, but frankly, I like this pasta salad better without the lettuce. 3) For this salad, which begs for a bold onion taste, green onion is just too mild. Next time, I will replace it with cubed red onion.
Ingredients include penne pasta, garlic clove, green onions, red bell pepper, iceberg lettuce, sour cream, salsa, hot taco sauce, canned diced green chilies, sliced black olives, and shredded Mexican cheese. Nutrient values - Sodium: 205 mg, Potassium: 260 mg, and Phosphorus: 128 mg.
