Now this is the meatloaf I've grown to love. I tried this recipe just a few days after fixing the Chipotle-Glazed Mini Meat Loaves recipe listed below. This stare and compare strengthens my view that a spicy, strong garlic meatloaf just can't stand up to a simple wholesome meatloaf flavor this recipe delivers. My mother's meatloaf is still the best I've ever had, but this recipe is just too good to give it a four star.
This recipe makes six servings, so I froze the extra servings for my work lunch breaks. There's only one improvement I would try and that is make a little more of the topping. The recipe makes just enough to put a thin layer on top. Doubling the topping might be too much, so next time I will increase it by one and half times.

It's recipes like this that inspires me to stick with the Davita diet. Sure it lacks that salty taste you are used to from a pizza chain, but the other flavors are rich and fulfilling. Ingredients include dry yeast, water, olive oil, sugar, all-purpose flour, low-sodium tomato paste, Italian seasoning, garlic powder, onion, green bell pepper, ground beef, black pepper, crushed red pepper, and shredded mozzarella cheese.
I was out of fresh green bell pepper, so I altered the recipe slightly by using red bell pepper. My potassium level is good right now and I want to keep it that way, so I cut this into slightly larger than bite size servings because this recipe is a little high in potassium. As many other dishes, this is best reheated in a toaster oven than the microwave.

Can't get much more full flavor and filling than this dish. The entree alone is good enough to enjoy by itself, but the rich brown gravy served on top gives it a five star taste. This recipe is packed with lots of protein, which is needed for dialysis patients to replenish their protein.
Ingredients include carrots, celery, onion, boneless short ribs, all-purpose flour, black pepper, canola oil, and reduced-sodium beef broth. Nutrient values - , Sodium: 189 mg, Potassium: 359 mg, and Phosphorus: 223 mg.

Not to take away from this recipe, but my mother's meatloaf was the holy grail of meatloaf, a true 5 out of 5 dish. So my rating here might be a bit biased. That said, this recipe is still good, the extra mini-loaves I made were a real treat for my lunch breaks at work. And it took only 20 minutes to prepare and combine the ingredients ready for the oven. I made four mini loaves, so that offers a lot of protein using a pound of 93% lean hamburger.
I would not tamper with an Italian dish by loading it with Oriental seasonings. So too with American meatloaf, I considered it a wholesome simple dish that should not be tampered with by loading it with hot and strong spices. The Chipotle and garlic this recipe calls for is just too strong. You could omit those seasonings, but then you might as well make Davita's All American Meatloaf recipe.

This recipe creates an excellent duplicate of the original dish. You will notice the lack of salt taste, but that's expected from a lot of Davita recipes. Also, the amount of noodles is too much, but that can easily be adjusted reducing the amount. Everything else has that rich stroganoff taste.
Ingredients include onion garlic cloves, boneless beef top round, reduced-sodium beef broth, dry sherry, dried oregano, freshly ground black pepper, dried thyme, bay leaf, sour cream, all-purpose flour, water, and egg noodles. Nutrient values - Sodium: 71 mg, Potassium: 325 mg, and Phosphorus: 275 mg.

Ground Beef and Veggie Foil Pack Dinner

Davita's image of this dish reminded of those cheap TV dinners, but Ground Beef and Veggie Foil Pack Dinner is a lot better than it looks. Ingredients include onion, ground beef, Worcestershire sauce, frozen carrots and peas, Italian dressing dry mix, and black pepper.
The recipe doesn't say what lean percentage beef, but I used 93% lean ground beef. This is another recipe great for freezing for later. It says it serves one, but it's pretty large, so I split it and froze the remaining half.

A very good dish that's more than just an entree, it's really a fully complimented meal featuring beef, pasta, seasonings, and vegetables. I couldn't find regular beef pasta, so I used toasted beef pasta instead. Also, to reduce preparation labor, instead of using raw zucchini which needs to be julienned according to the recipe instructions, I used frozen zucchini spirals. Spirals is close enough to julienne.
Ingredients include beef ravioli, medium zucchini, green onions, medium red bell pepper, garlic powder, dried basil leaves, black pepper, and reduced-sodium chicken broth. Not so great nutrient values - Sodium: 258 mg, Potassium: 405 mg, Phosphorus: 155 mg.

Sliders Dijon

Every bit as good as White Castle Sliders! The challenge is eating just one per day. Before going on a kidney friendly diet, I could eat a handful of these. I froze the remaining servings for later without the mustard and pickle so I can reheat them in the toaster oven.
Ingredients are real simple - large onion, Hawaiian sweet dinner rolls, ground beef, canola oil, Dijon mustard, and bread & butter pickle chips. The nutrient values are not super low, but they are not exactly real high either - Sodium: 180 mg, Potassium: 227 mg, and Phosphorus: 143 mg.

Spicy Basil Beef Stir-Fry

The compliment of seasonings makes this a savory dish. The ingredients makes a thick creamy sauce that is more spicy in flavor rather than spicy as in hot. I was out of red bell pepper, so I substituted it with orange and yellow bell pepper. Not included in the ingredients, but the recipe suggests you can add orange zest, which I did.
Ingredients include beef flank or sirloin steak, fresh basil leaves, small onion, medium red bell pepper, garlic cloves, peanut oil, red pepper flakes, reduced-sodium
soy sauce, cornstarch, low-sodium beef broth, lime juice, and cooked white or brown rice. Nutrient values - Sodium: 172 mg, Potassium: 390 mg, Phosphorus: 258 mg. The recipe says this makes six servings, but I divided into ten smaller servings because of the high nutrient values.
